Job Description
Culinary Internship - Nationwide
Compass Group’s various lines of business are seeking qualified culinary students to participate in the organizations internship program. We are seeking students that are currently enrolled in a full time college level culinary program. The internship students will report to a Compass mentoring supervisor at the account they have been accepted at who will provide supervision and manage the students work schedule and coinciding projects and assignments.
Recipe to Succeed:
- Cook, prepare, present, and serve food items. Ensure that food is prepared in a manner which is nutritious, safe, properly flavored and in compliance with district, USDA, and accrediting agency standards for quality
- May oversee the cooking activities of the food service workers as assigned by on site supervisor
- Work with catering manager to organize catered events
- Communicates and coordinates with supervisor on strategies to accomplish production and maintain quality standards
- Assists supervisor in maintaining accurate daily production records
- May be required to collect, record, and report quantities used, amounts produced, amounts left over and meal counts accurately in compliance with District and government regulations
- Offer and serve correct portions
- Clean and restock work area throughout the day. Maintain standards for sanitation and cleanliness by following standards for “clean as you go” and scheduled routine cleaning. Cleaning duties may include, but are not limited to: equipment, utensils, serving area, dining area, floors, walls, baseboards, and storage areas.
- Assist in maintaining organized storage of dry goods, refrigerated and frozen products
- Assist on site supervisor in accurate counting of food and supplies for inventories
- Assist in the cooking, preparation and service of food for multiple special events
- Attends training and development classes and work site meetings as required by mentoring supervisor
- Follow safety and sanitation guidelines
- Wear the prescribed uniform and maintain professional appearance at all times
- Maintain clean and safe work environment; ability to perform job safely
- Ability to read and comprehend simple instructions, recipes, production sheets, temperature logs, safety rules and MSDS sheets
- Working knowledge of food handling, preparation, production, standard kitchen equipment, food safety and sanitation
- Ability to understand recipes, production sheets, and inventories
